Indian Curried Multigrain Pilaf with Veggies on Naan

Ingredients:
-Olive oil
-Premade multigrain pilaf
-Steamed frozen mixed veggies (or your own, fresh)
-Curry sauce
-Black beans (cooked)
-Naan

Pesto Pizza with Goats Cheese

Ingredients:
-Pillsbury refrigerated pizza dough
-Olive oil
-Pesto
-Baby spinach
-Crumbled goats cheese
-Italian seasonings

Sprouts and Hummus on Garlic Naan

Quite self explanatory. You take a piece of garlic naan, heat it up in the oven at 400 for about 5 minutes (don't forget to sprinkle with water!), spread it with hummus, then apply sprouts.

Very yummy. I ate mine with grapes.

chickpea chicken curry stir-fry

Ingredients:
-baby spinach
-snap peas
-baby carrots (cut in half length-wise)
-canned chickpeas
-pre-cooked chicken

cooked in vegetable and sesame oil with lemon juice. Ground ginger and curry paste added as cooked. Sesame seeds sprinkled on top.

could be done without chicken to be nice and vegan friendly! And I'd suggest naan for dipping in the sauce.
